CREAM OF CELERY SOUP
preparation: 10 minutes • processing: 6–7 minutes • makes: 960ml
400ml chicken stock
1/4 small onion, peeled
320g celery, chopped
25g parsnips, scrubbed
and chopped
1/2 small potato,
scrubbed and baked
1/2 garlic clove, peeled
a pinch of white pepper
1/3 tsp salt
3 tbsp single or double
cream, or milk
1. Put all the ingredients, except the cream, into the
Vitamix container in the order listed and secure
the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed
to Variable 10, then to High.
4. Blend for 6–7 minutes or until heavy steam escapes
from the vented lid.
5. Reduce the speed to Variable 4 and remove the
lid plug.
6. Add the cream through the lid plug opening and
blend for a further 15 seconds.
