POTATO AND SPINACH SOUP
preparation: 10 minutes • processing: 6–7 minutes • makes: 1.2 litres
720ml vegetable stock
2 potatoes, scrubbed,
baked and cut into
quarters, with skin
1/8 onion, peeled
1/3 tsp dried rosemary
20g frozen spinach
This recipe can be
reduced by half and made
in smaller containers.
1. Put all the ingredients into the Vitamix container in
the order listed and secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 10, then to High.
4. Blend for 6–7 minutes or until heavy steam escapes
from the vented lid.
