TOMATO ALFREDO SAUCE
preparation: 3 minutes • processing: 6 minutes • makes: 720ml
4 plum tomatoes,
cut into halves
240ml very low-fat
evaporated or
semi-skimmed milk
225g low-fat
cottage cheese
30g low-fat butter spread
3 tbsp plain flour
salt and freshly ground
black pepper
1. Put all the ingredients, except the salt and pepper,
into the Vitamix container in the order listed and
secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 10, then to High.
4. Blend for 6 minutes or until heavy steam escapes from
the vented lid.
5. Season to taste with salt and pepper.
