COLESLAW DRESSING
preparation: 5 minutes • processing: 15–20 seconds • makes: 1.1 litres
SLAW
350g cabbage, cut into
5cm wedges
1 medium carrot, peeled
and cut into quarters
1 1/2 spring onions, cut
into quarters
DRESSING
120g very low-fat
mayonnaise
120g very low-fat
soured cream
1/2 tsp salt
1/2 tsp apple cider vinegar
freshly ground black
pepper, to taste
FOR THE SLAW
1. Put the cabbage wedges, carrot and onions into the
Vitamix container in two batches.
2. Fill the container with enough water to cover the
vegetables, and secure the lid.
3. Select Variable 1.
4. Turn the machine on and slowly increase the speed to
Variable 4 or 5.
5. Blend for 5 seconds until chopped.
6. Drain well, put into a bowl and set aside.
FOR THE DRESSING
1. Put all the ingredients into the Vitamix container in
the order listed and secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 4.
4. Blend for 10–15 seconds, or until the desired
consistency is reached. Pour over the slaw and mix
with a spoon.
