SPINACH ARTICHOKE DIP
preparation: 5 minutes • processing: 20 seconds • baking time: 20–25 minutes • makes: 660g
120g low-fat mayonnaise
120g low-fat soured cream
1 peeled lemon
slice, deseeded
280g frozen spinach,
thawed and drained
1/8 tsp salt
1/8 tsp freshly ground
black pepper
1 garlic clove, peeled
25g freshly grated
Parmesan cheese
85g frozen and cooked
artichoke hearts or tinned
artichoke hearts, drained
1. Preheat the oven to 180°C/Gas 4.
2. Put all the ingredients, except the artichoke hearts,
into the Vitamix container in the order listed and
secure the lid.
3. Select Variable 1.
4. Turn the machine on and slowly increase the speed to
Variable 4.
5. Blend for 15 seconds. Remove the lid plug.
6. Add the artichokes through the lid plug opening.
7. Blend for a further 5 seconds.
8. Pour into an ovenproof dish and bake uncovered for
20–25 minutes or until bubbly.
