ACORN SQUASH SOUP
preparation: 5 minutes • processing: 5 minutes • makes: 960ml
480ml chicken broth
120ml low-fat
evaporated milk
1/2 medium acorn squash
or 1/2 small butternut
squash, peeled, deseeded
and cooked
1 tsp maple syrup
a pinch of freshly
grated nutmeg
1/4 tsp ground cinnamon
salt and freshly ground
black pepper
1. Put all the ingredients into the Vitamix container in
the order listed and secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 10, then to High.
4. Blend for 5 minutes or until heavy steam escapes from
the vented lid.
5. Season to taste with salt and pepper.
