VEGGIE TOFU SCRAMBLE
preparation: 5 minutes • processing: 5–10 seconds • cook time: 12 minutes • serves: 2
80g shallots or red onions,
coarsely chopped
45g jalapeño chillies,
deseeded
100g button mushrooms
210g silken tofu
1 tsp olive oil
1 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp ground turmeric
1/2 small tomato, chopped
Be sure to use silken tofu
for this recipe.
1. Put the onions, chillies and mushrooms into the
Vitamix container and secure the lid.
2. Select Variable 3.
3. Turn the machine on and o quickly 3–4 times to
chop the vegetables. Pour into a bowl and set aside.
4. Put the tofu into the Vitamix container and secure
the lid.
5. Select Variable 2.
6. Turn the machine on and o quickly twice.
7. Gently fry the chopped vegetables in olive oil until
slightly softened. Add the seasonings and tofu to the
fried mixture.
8. Stir occasionally until dry, about 8 minutes. Stir in the
chopped tomatoes. Season to taste.
