FRESH GINGER ALL–PURPOSE SAUCE

2.5cm piece fresh root
ginger or 1 tsp ginger
paste (Page 155)
100g silken tofu
120g low-fat soured cream
1 garlic clove, peeled
2 tsp soy sauce
1 lemon, peeled,
cut in half and deseeded
a thin strip of lemon zest
1 spring onion,
thinly sliced
1. Put all the ingredients, except the spring onion, into
the Vitamix container in the order listed and secure
the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 10, then to High.
4. Blend for 30 seconds.
5. Stir in the spring onion.
Serve as a dip with fresh vegetables or as a sauce with
grilled seafood or poultry.
