CHEDDAR POTATO SOUP
WITH BACON
preparation: 5 minutes • processing: 5–6 minutes • makes: 960ml
480ml skimmed milk
2 medium floury potatoes,
such as Maris Piper,
scrubbed and baked,
with skin
40g grated, low-fat
Cheddar cheese
1/4 small onion,
sliced and sautéed
1/2 tsp dried dill
1/2 tsp dried rosemary
1/2 tsp salt
55g turkey bacon, or
lean bacon, cooked
and crumbled
1. Put the milk, 1 potato, the cheese, onion, dill, rosemary
and salt into the Vitamix container in the order listed
and secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 10, then to High.
4. Blend for 5–6 minutes or until heavy steam escapes
from the vented lid.
5. Reduce the speed to Variable 3.
6. Remove the lid plug. Drop in the remaining potato and
the bacon through the lid plug opening. Blend for a
further 10 seconds until chopped.
