2. Fill the oil cart with the desired amount of oil or fat. Observe the minimum and maximum permissible fill
quantities of the oil cart of 15– 49 litres.
Melt solid fat
a There is at least 15 litres of solid fat in the oil cart.
1. Turn the heater switch from 0 to I.
> The fat has been heated at 80°C and is liquid. The pump will not operate while the heater is running.
2. Once the fat is liquid, turn the heater switch from I to 0.
> The heater will be switched off. Now you can fill the pan with fat.
Filling the pan
a There is liquid oil or fat in the oil cart.
1. Move the oil cart to the cooking system.
2. Swivel the outlet pipe over the pan so that oil or fat can drain safely into the pan.
3. Apply the locking brakes of the oil cart.
4. Connect the oil cart to the mains with the mains cable.
5. Switch on the oil cart.
6. Turn the pump switch from 0 to I.
> The oil cart pumps oil or fat into the pan.
7. Once the desired quantity of oil or fat is in the pan, switch the pump switch from I to 0.
8. Disconnect the oil cart from the power supply, release the locking brakes and move the oil cart to its storage
location. WARNING!Risk of burns! If hot oil or fat has been pumped into the pan, the drain pipe will
become very hot. Only move the oil cart using the handles.
Emptying the pan
a The drain opening is closed.
1. Move the oil cart to the cooking system at the level of the pan spout.
2. Apply the locking brakes of the oil cart.
3. Open the oil cart lid and place the filter in the opening.
4. WARNING!Risk of burns! Tilting the pan too quickly may cause hot oil to splash. Wear your personal
protective equipment to prevent burns. Carefully tilt the pan and make sure that the oil or fat runs precisely
into the opening of the oil cart. Make sure that the filter in the oil cart does not overflow. This is the only way
to ensure that all the oil or fat is filtered.
5. Tilt the pan all the way until the pan is completely empty.
6. Remove the filter and clean it.
7. Close the lid of the oil cart.
8. Release the locking brakes and move the oil cart to its storage location.
6.5.5 Melt solid fat
If you do not fill the pan with the oil cart [}44], you can melt solid fat as follows:
1. Place the solid fat in the pan. Do not exceed the minimum and maximum fill levels [}17].
2. Select the manual deep fry mode.
>> The pan will automatically be preheated to the set temperature. The fat will liquify. When the fat has reached
the desired temperature, you will be asked to load the pan. Click here for more information: Frying food

6.5.6 Frying food
If you are deep-frying food, we recommend using deep-frying baskets. The following paragraph therefore
describes deep-frying using deep-frying baskets.
