HONING THE KNIFE
THIS PROCEDURE SHOULD BE
PERFORMED BY TRAINED AND
QUALIFIED PERSONNEL ONLY.
ADANGER!
Always use extreme caution when
working with or around the Knife. Never
transport the Knife without the Knife
guard/carrier installed. Failure to do so
will result in severe injury.
Thoroughly clean the cutting edge and the
Knife before proceeding. Check that the
cutting angle on the Knife matches the angle
set on the honing mechanism.
STEP 1 PRESS THE “MASTER OFF”
BUTTON
The door is magnetically interlocked however,
it is good practice to use the “MASTER OFF”
button also. (Illustration 1) With the main
power on, a light will illuminate the inside of
the honing enclosure.

KNIFE SYSTEM HONING PROCEDURE
FOR “F4” AND “F2” SERRATED KNIVES
ACAUTION!
This is a honer for use in touching up a slightly dull knife edge. It IS NOT a grinder that will
put a new cutting edge on a severely dull and/or damaged knife.
The angle markings are for initial setup only and are not intended to be precise. Each knife
has some amount of angle variance and each will require a certain amount of final
adjustment/setup prior to honing.
Using the honing stones at an angle that is more steep than required may appear as though a
fresh cutting edge can be obtained much faster but, in reality, will result in poor performance
and quickly lead to an unusable knife that requires regrinding. This is especially true of the
flat side hone stone. It always needs a negative angle setting
