INTRODUCTION
The Slicer Tooling consists of 3 major parts: the Knife, the Shear
Bar, and the Gripper assemblies. The following information
describes the care that must be taken to maintain the maximum
life and receive the optimum performance from your Formax
Tooling.
KNIFE
The Knife is the primary component of the Slicer. To receive the
optimum life and performance from your Knife, it is necessary to
follow these procedures.
1. USE THE KNIFE GUARD/CARRIER
Any time you install, remove, or transport the Knife, always use
the Knife guard/carrier. This is primarily for safety, but, it also
protects the Knife edge. The smallest nick in the edge can affect
the slicing operation.
2. KEEP THE KNIFE SHARP
Hone the “Involute” and “Fx” Knives on a regular basis; at least
once a day. The longer you wait to hone, the longer it will take
you to get the sharp edge back. Depending on the product, it may
be necessary to hone more often than once a shift. A dull Knife
can also cause ragged edges on the slices. Deburr the “Serated”
Knives on a weekly basis or as necessary. DO NOT use the
“Hone Stone” on a Serrated Knife!
3. USE PROPER HONING TECHNIQUES
Always hone a clean Knife. Dirty Knives clog hone stones. Always
maintain the honing device. Verify the hone stone angle each time
you hone a Knife. You can only hone a Knife so many times
before you need to regrind it. See the “Honing Systems”
supplements for more information on “Honing the Knife.”
4. CHECK THE KNIFE CLEARANCE
Any time you install the Shear Bar or a new Knife, reset the Knife
to Shear Edge Clearance. Touch the “Move To Ready" button on
the “Run” screen. This will force an alignment of all Slicer
components and automatically reset the Knife Clearance.
