5. Install the Knife edge cover and the Knife
guard/carrier. (Illustration 20)
ADANGER!
Use extreme caution when reaching in near
the Knife. Never transport the Knife without
the Knife guard/carrier installed. Failure to
do so will result in severe injury.
6. Loosen and remove the retaining knobs.
7. Remove the Knife from the honing system.
8. Replace the retaining knobs and close the
door. (Illustraion 21)
IMPORTANT!
It is important to keep the honing mechanism in
good mechanical shape. The honing stones
should be replaced if they become chipped,
worn, or if the honing edge becomes beveled.
Failure to maintain the honing mechanism will
damage the cutting edge on the Knife.
