BEARNAISE SAUCE
Ingredients
3/4 tsp dried tarragon
1 spring onion
1/2 tsp peppercorns
2 tbsp white wine vinegar
2 tbsp white wine
2 tbsp lemon juice
3 egg yolks
125g butter, cubed
salt and pepper, to taste

1) Place tarragon, spring onion and peppercorns into the bowl and chop for

3) If sauce separates or is not thick enough add 1 tsp of boiling water through the measuring
